Beef (Buna Ghosh)
5 lbs. Beef, cut into chunks
1 lemon
2 Tbsp. Salt
2 Tbsp. Ground cumin
2 Tbsp. Black pepper
1 Tbsp. Crushed red pepper
2 cups sliced tomatoes
1 cup sliced onions
1 cup cilantro
To beef, add lemon, salt, ground cumin, black pepper and crushed red pepper. Put 5 tablespoons oil in fry pan on high. Place marinated beef in pan (MARINATED FOR HOW LONG?). For 15 minutes leave the lif of fry pan closed. Then stir the beef and leave lid slightly open. Change setting to medium-low. If there is too much curry, leave the pan lid open. When beef is almost done, there will be some curry left. At this point, add the tomatoes and simmer. Then turn off the pan and garnish with cilantro and onions. (WHEN DO YOU ADD TOMATOES?)
Cucumber Dip (Raita)
32 oz. of plain yogurt
3 cucumbers, sliced and then cut into quarters.
1 Tbsp. Salt
1 Tbsp. Garlic
1 Tbsp. Ground cumin
1 Tbsp. Cilantro
First, beat yogurt until smooth and add salt, garlic, and ground cumin. Add the cucumbers to the yogurt. Garnish with cilantro.
Flat Bread (Parata)
4 cups flour
1 tsp. Salt
1 Tbsp. oil
water to make dough consistency
In bowl, put 4 cups flour, salt and oil. Mix thoroughly and add enough water to make the dough. Knead dough and then form tennis ball sizes of dough. Place some flour on the counter and roll out the dough balls into circles. Spread some oil inside the circles. Fold the circles into a square, press and roll out each corner to make another square (about 6x6”).
Deep fry the square sheets of dough in oil.
